Remove from heat after a few minutes, and set aside to cool while you prep the vegetables and cook the shrimp. Once the noodles are semi-cooled, add them to a bowl along with the chopped veggies. Pour in the peanut sauce and toss to combine. Top with cooked shrimp, then garnish with chopped peanuts, freshly chopped cilantro, and a squeeze of lime.
