@erekasfood: I eat salads at least 4 times a week for lunch or dinner so I’m always looking for ways to mix it up. This one is light, crisp and so satisfying. Add tuna and/or farro to make it a more hearty meal. Serves 2 Ingredients: 1 green apple diced into small cubes 4 ounces manchego diced into cubes 1/2 fennel bulb shaved thin (frons reserved) or 1 cup chopped romaine 1/4 cup chopped hazelnuts 3 endives, finely chopped 1/4 cup chives 1/2 cup parsley, leaves only 1 can tuna (optional) 1/3 cup cooked farro (optional) Dressing Ingredients: 1/3 cup olive oil 1 tbsp apple cider vinegar 1.5 tbsp honey 1/2 orange juiced 1/2 shallot 1 tsp mustard 1/2 tsp salt -Add all the dressing ingredients to a blender and blend well. #salad #saladrecipe #easyrecipesathome #vegetarianrecipes #greensalad #healthyrecipes #healthyfood
