Raspberry crumble cookies🍰🌷 Recipe: Ingredients - 1 cup unsalted butter, softened (226g) - 1/2 cup granulated sugar (99g) - 1 1/2 tsp vanila - 1 tsp almond extract - 2 1/2 cups all-purpose flour (300g) - 1/4 tsp salt - 3/4 cup raspberry jam (255g) - Powdered sugar for topping Instructions 1. Preheat oven to 350°F. Grease a jumbo or regular muffin tin. 2. In a large bowl beat the butter and sugar until light and fluffy. 3. Add vanilla and almond extract. Mix until combined. 4. In a small bowl whisk together flour and salt. 5. Add the dry ingredients to the creamed mixture and mix until almost combined. Once it looks crumbly stop mixing. Do not over-mix. 6. Add crumble to the muffin tin and press down and up the sides to create a well. 7. Add some raspberry jam and top with crumble. 8. If using a jumbo muffin tin bake 18-22 minutes. If using a regular muffin tin bake 15-18 minutes. 9. Let the cookies cool in the muffin tin for about 15-20 minutes and then remove from the pans. Place a baking sheet on top of the muffin tins and flip it over. Give each one a tap and they will come out.
