pasta party ftw 🤩 sooo easy to do, recipe below! -2cups 00 flour -3 room temp eggs -pinch of salt -1/2tbsp olive oil -make a well in the flour, add the eggs, salt, and oil -whisk with a fork and slowly incorporate some of the flour -use a bench scraper to fold the eggs and flour until its together enough to knead -knead for 5ish min until the dough is smooth. It should bounce back when pressing on it! Dont over knead!! -cover in a little olive oil, wrap in plastic wrap and let sit for 30 min. -divide dough into 4ths. Put through the largest setting, fold, and run through the largest setting one more time and each setting until it’s the thickness you like!! Add flour when needed -add pasta to boiling salted water and cook for 2-3 min until its floating. Mix with sauce of choice and enjoy 🫶🏼
So happy its artichoke season 🤤 recipe below! Stuffed artichokes!!! Ingredients: -2 artichokes -2 lemons -3/4c bread crumbs -1 small yellow onion (1c ish diced onions) -3tbsp white wine -4tbsp butter -2 garlic cloves -1/2c grated parm -1tbsp basil -1.5tbsp parsley -salt and pepper -olive oil -Aioli: 1/3c mayo, 1/2tsp salt, 1-2 garlic cloves, 1tbsp lemon juice, pepper Recipe: -cut the stems and tops of the artichokes, cut the tip of the leaves -soak in cold water w a lemon for 10 min, rinse with cold water -steam on the stove or instant pot (instant pot: add 1c water, the lemons used when soaking, 1 bay leaf, and place artichokes face down on steaming rack. high pressure cook for 15 min, release stem) -heat a med pan on med heat. add butter, onions and a pinch of salt. Cook until onions are soft, add garlic and cook for another 2-3 min. Add wine and let reduce until most of the liquid is absorbed (10ish min) -preheat oven to 375F -mix together bread crumbs, basil, parsley, cooked onions, grated parm, 1/2 of a lemon (1tbsp lemon juice), lemon zest, salt and pepper. Taste and adjust! -stuff the artichoke leaves w the breadcrumbs. Use your finger to spread it open -top w/ parmesan and olive oil! Bake for 15 min! -mix together aioli ingredients -ENJOY!! ***how to eat them: use your teeth to scrape off the flesh and discard the leaves. When you’re close to the base, spoon our the fuzzy center “choke” and eat the heart!
