Spoon the gravy over it, cover, and simmer on low heat for 20–25 minutes until tender and fully cooked. Stir in fresh parsley before serving.  Add rinsed rice, water or broth, butter, and salt to a pot. Bring to a boil, cover, reduce the heat to low, and cook for 15–18 minutes. Let rest for 10 minutes, then fluff with a fork and mix in parsley.  Heat oil or butter in a small pot. Cook onion until soft, then add garlic, smoked meat, black-eyed peas, chicken broth, paprika, pepper, and salt. Simmer for 12–15 minutes until flavorful and slightly saucy.
