Fun fact: Korea is the largest consumer of Spam outside of the United States. Today, it’s a cherished ingredient, symbolizing how Koreans have always found ways to transform hardship into something better. #Pachinko Season 2 Finale out now. #AppleTVPlusPartner Ingredients: 12 oz (340g) beef franks, sliced ⅜-inch thick 6 oz (170g) Spam, sliced ½-inch thick 1½ Tbsp (21g) butter 8 oz (227g) skinless pork belly, cut into small pieces 1½ lb (680g) well-fermented cabbage kimchi 3 cups water 6 Tbsp kimchi juice 2½ tsp fish sauce 2½ tsp sugar, plus more for seasoning 2 tsp Dasida beef stock powder Optional: firm tofu and green onion Instructions: 1. Bring 6 cups water to a boil in a large pot and submerge beef franks and Spam for 1 minute. Drain and rinse pot. Set aside beef franks. 2. Cook Spam in a nonstick skillet over medium heat until golden brown and crisp, about 5 minutes per side. Turn off heat and snip Spam into bite-size pieces. Set aside Spam. 3. Melt butter in now-empty pot over medium-high heat. Add pork belly and mix to coat pork with butter. Cook until pork is 80% cooked, about 1 minute. Add kimchi and mix to coat with butter and pork fat. Mix occasionally so the flavors of kimchi and pork cook together, about 5 minutes. 4. Increase heat to high and add water, kimchi juice, fish sauce, sugar, and Dasida. Cover and let it come to a boil. Once boiling, reduce heat to medium and cook until kimchi becomes wilted and translucent, about 7 minutes, covered. Add beef franks and Spam, and bring to a boil over medium-high heat. Reduce to a simmer until stew is flavored with Spam and beef franks, about 5 minutes (add sliced tofu and green onion if you wish).
