@munchinwithmaddie_: lemon in savory meals >> this is *nearly* a one-pan meal (you just have to parboil the potatoes first), is both gluten & dairy free and is balanced with protein, veggies, carbs and healthy fats…we love her! 👏 RECIPE: -olive oil -1 lb baby potatoes, quartered -12oz asparagus, ends trimmed and cut into quarters -1.5 lb boneless, skinless chicken breast, cut into bite sized pieces -salt + pepper -1/3 cup chicken broth (i used bone broth) -3 cloves garlic, minced -1 tsp lemon zest -1 cup full fat canned coconut milk (heavy cream should work too! or a dairy free heavy cream alternative) -juice from 1 lemon -1 tbsp arrowroot/cornstarch + 1 tbsp water (if you use heavy cream or a heavy cream alternative you can omit this!) -chopped parsley (optional, for garnishing) Bring a large pot of water to a boil. Once boiling, add potatoes & cook for 6-8 minutes or until fork tender. Drain. Bring a large pan to medium heat. Once hot, add a bit of oil. Then add potatoes and asparagus Season with salt & pepper. Let cook for about 10 mins, stirring occasionally. Remove from pan and set aside. Add a bit more oil to the pan. Then, add chicken and season with salt & pepper. Cook for 3 minutes on each side (6 minutes total). Remove chicken from pan and set aside. Deglaze the pan with broth. Add garlic and lemon zest. Cook for 1 minute. Reduce heat to low and add coconut milk & lemon juice. Then, while stirring, quickly add the arrowroot starch slurry and whisk it up until there are no clumps. Continue simmering until sauce has thickened. Then add back in the cooked potatoes, asparagus and chicken and toss to combine. Let everything warm up and then garnish with some chopped parsley if desired.
