Deglaze with wine (if using), scraping up brown bits. Slowly pour in broth, stirring until smooth. Add cream + Dijon, simmer 5–7 min until thickened. Season with salt & pepper. 4. Add cheese & bake: Stir in half the Gruyère. Top with remaining Gruyère. Broil or bake at 200°C (400°F) for 8–10 min, until cheese is bubbly and golden. 5. Serve: Garnish with chives/parsley. Serve hot with toasted baguette slices for dipping.
