India recreates ep 2: pitha! A rice flour dumpling stuffed with flaxseeds or black sesame seeds, coconut, and jaggery. There are lots of variations of pitha across South Asia, from savory versions with dal to sweet versions like these.  To make about 10 of them, 5 of each type  - 2 cups rice flour  - 2 cups water plus more as needed - 1/4 cup flax seeds  - 2 tbsp shredded coconut  - 1/4 cup black sesame seeds - 1/4 cup jaggery, divided 1. Bring 2 cups of water to a boil in a pot. Slowly pour rice flour and mix well. Turn off the heat and let it cool down a bit. Then transfer to a bowl and knead your heart out until you have a smooth dough.  2. Prepare the fillings. In a pan over medium heat, dry roast the flax seeds and coconut for about 5 minutes. Stir occasionally during this time. Let it cool before grinding and mixing in 2 tbsp jaggery. Do the same with the black sesame seeds and remaining 2 tbsp jaggery.  3. Take a little bit of the dough and create a bowl shape with it. Add either the flaxseed mixture or black sesame mixture (or both! I liked that a lot) inside and use the back of a spoon to push it in and make room for more filling. Close it and set aside for steaming.  4. Bring about an inch of water in a pot to a gentle simmer. Add pithas to a steamer basket. Cover and steam for 10 minutes. (Alternatively you can also cook them in boiling water but I have not tried!)
