You lovely lot asked, so who am I to not share my super mild family friendly curry recipe...also I cannot take full credit for this - it was totally inspired by @rebeccawilsonfood  SO...now tweak this as you will. Sometimes I like to lob in some chopped frozen spinach but I didn’t have any yesterday (if your kids will refrain from picking out fresh spinach leaves then excellent, mine won’t)  Ingredients: Olive oil Garlic Frozen chopped (Make this change if you haven’t already, please)  4-5 chicken breasts Grated Carrot (as much as you want basically - my wrist gave up after two big ones)  Grated Butternut squash - about a quarter went into this for the same issue as above 1 stock cube (chicken or veg)  Medium/mild curry powder (or your own mix - I would use Garam Masala if I had it)  Coconut milk/Greek Yog/Creme Fraiche Method (if you can call it that - and apologies in advance but I don’t measure anything)  Over a medium heat, soften the onions, garlic, grated carrot and butternut squash in a large pan (I use a super heavy duty one that can go into the oven - bit like the posh Le Cruset ones, but not)  Add the chicken and coat all the ingredients together until the chicken’s exterior is white/sealed. Sprinkle in as much curry powder/mix as you like, coat all together.  Cover with water and throw in your stock cube. In terms of liquid - I just fill until the chicken is just about covered - you can always add more once it’s out of the oven later on.  Cover, and put into a preheated (I rarely preheat mine but I enjoyed typing that) on 160 for Ideally 1.5-2 hours. Basically I make it work for me - so I try to lob it all in together as above pre school pick up, and then once home, remove to do the shredding and leave on a low heat until we all eat together around 5/5.30.  I use chicken breasts so shred them after around 1.5 hours as I said, then cover over a low heat - add more water if I need it (but also if I’m using coconut milk that’ll loosen it up nicely) and then stir in the creme fraiche/coconut milk/greek yoghurt of choice before serving up to my beautiful children who said it looked like sick “BUT TASTES AMAZING MUMMY!” 🤪😍
