Sundays were dandelion salad days in my childhood. Great with vinegar and oil. You can prolong the season by covering with a sheet of plywood.

I boil mine for 3 minutes before frying. it keeps from using so much oil and space in the skillet.

My grandma always made dandelion greens with hot bacon and vinegar dressing, over mashed potatoes, with crumbled hard boiled eggs on top. 🤤
