In the US we say "Do you want some Chinese/Mexican/Italian?" I think the "a" throws us off.

We phrase things almost the exact same way in the USA. The only difference is we don’t use the definite article “a” or “an”

Yep! Different cuisine tailors for different regions around the world. “Chinese food” in the U.S. is gonna differ from the UK, from actual China, etc
