Yield: 16-18 buns Ingredients: For the Dough: - 4 1/2 cups (570g) all-purpose flour - 4 tsp (12g) rapid instant dry yeast - 1/3 cup (67g) granulated sugar - 1 tsp (5g) salt - 1 1/2 cups (360ml) lukewarm milk (not hot) - 6 tbsp (84g) unsalted butter, softened - 1 egg, room temperature - 1 tbsp (15g) vanilla extract or vanilla bean paste For the Filling: - 1/4 cup (55g) butter, room temperature - 1 1/2 tbsp (22g) cinnamon - 1/2 cup (100g) light brown sugar For the Frosting: - 4 oz (115g) cream cheese, room temperature - 1 tsp (5g) vanilla extract - 1/3 cup (75g) unsalted butter, room temperature - 1 cup (200g) powdered sugar - Pinch of salt - 3 tbsp (45ml) milk Instructions: Heat milk for 30-40 seconds in microwave or until lukewarm. Let cool if too hot. Add yeast, stir gently.Let mixture sit for 10 minutes. Combine 2 cups (250g) flour, salt, sugar in a mixing bowl. Add softened butter, egg, milk-yeast mixture and vanilla bean paste.Mix with a wooden spoon until combined. Gradually add 2 additional cups (250g) of flour, mixing with a wooden spoon until a shaggy dough forms. Add the remaining 1/2 cup (60g) of flour and mix until the dough starts to come together. Lightly grease your hands with oil and knead the dough on a floured surface for 5-7 minutes, until it forms a smooth, elastic ball. Place dough in greased bowl, cover with plastic wrap.Let rise in warm place for 30 minutes. Prepare Filling: Mix softened butter, brown sugar, cinnamon. Roll Out Dough and Add Filling: Roll out dough to 1/4 inch thickness.Spread filling mixture evenly.Roll dough tightly.Cut rolled dough into 12-15 pieces using a thread or unflavored floss . Place rolls in greased baking dish. Bake Rolls: Preheat oven to 350°F (190°C) Bake rolls for 25-30 minutes. Prepare Frosting: Beat cream cheese and butter until smooth.Add powdered sugar, vanilla extract, salt.Add milk, mix until desired consistency.
