CARAMELIZED CATFISH⤵️ Once Upon a Supper— a series where I show you what it’s REALLY like to cook dinner as a mom to small children + I show you their before and afters.  My kids are always asking to help in the kitchen… it slows down the process a lot but I let them because it teaches them to be responsible, helps with fine motor skills, teaches them independence, confidence, helps with kitchen safety and so much more.  I try my best to give my kids balance meals, and if the meals are not balanced, then I try to make it up for in smoothies   INGREDIENTS 4 catfish filets Garlic powder 2 TBSP sugar 2 TBSP oil 1 can coco rico (12 oz) 3 TBSP fish sauce Dark soy sauce (optional)     INSTRUCTIONS 1. Wash catfish in some water and salt. Then rinse off the salt water and pat dry 2. Season catfish with garlic powder 3. on a skillet, heat up some sugar + oil. Cook this on medium low heat until it turns into am amber color… make sure to stir occasionally 4. once your sugar and oil mixture turns into an amber color, add your catfish filets. cook for ~1 minute then flip and cook for another ~1 minute. 5. Then pour in 1 can coco rico (12 oz), 3 TBSP fish sauce and a drizzle of dark soy sauce. Bring this to a boil and then reduce heat and simmer for 10-15 minutes. Don’t forget to baste every so often during the 10-15 minutes 6. After 10-15 minutes of cooking, carefully flip your filets over 1 more time. Taste test to see if you need to adjust anything 7. If everything taste good, then crank heat to high and cook for 5 minutes. Your sauce with reduce and thicken.
