@michaelfinch: STICKY EGGPLANT 🍆 - 6 medium eggplant or 3 large - Celtic salt (as much as you want, for eggplant) - 1 whole bulb garlic, minced - 1inch knob of ginger - 3tbsp soy sauce or tamari - 1tbsp shaoxing wine - 2tbsp coconut sugar - 1 1/2tbsp white miso paste - 2tbsp mirin - 3tbsp hoisin sauce - 1tsp allspice - 1/3cup water - 2tbsp tomato paste - Spring onions, for garnish - Chilli oil, optional - In a hot pan get some colour on all sides of the eggplant, add garlic and ginger mix, cook for 3 minutes. Add tomato paste and cook until deepened in color. Add the sauce, pop lid on and allow to simmer for 10-15mins or until eggplant is cooked to your liking and sauce has thickened up! You could totally do a slurry of some sort to make the sauce thicker but I personally don't think mine needed it! Enjoy🍆 Mx
