@erekasfood: My GREEK SALAD is not authentic, but it is incredibly delicious. It was my first time using preserved lemons and I love the flavor. MY GREEK SALAD: 8oz cherry tomatoes cut in 1/2 8oz kalamata olives cut in 1/2 1 cucumber diced 1 green bell pepper chopped 1 red onion diced 1.5 C fresh parsley 2 C chopped romaine lettuce 2 to 4 ounces of feta Add all the salad ingredients to a bowl. Top with crushed pita chips (recipe below) and dress with vinaigrette (recipe below) before serving. PITA CHIPS: 4 small pita cut in 4 1 Tbsp olive oil 1 Tbsp oregano 1/2 Tsp garlic salt Preheat oven to 350F. Brush chips with olive oil. Sprinkle with dried oregano and garlic salt. Bake pita chips at 350 for 10-12 minutes or until crisp VINAIGRETTE: Blend the following ingredients 1/3 cup olive oil 1 Tbsp red wine vinaigrette 1/4 preserved lemon 1/2 shallot 3 Tbsp fresh parsley 1.5 Tbsp honey 1/2 Tsp oregano NO SALT….PRESERVED LEMON IS SALTY SWAP: You can swap the preserved lemon with 2 tsp lemon juice + 1/4 tsp salt. #fypシ #salad #saladrecipe #greeksalad #vegetarian #EasyRecipe
