Pls go make yourself a batch, you’ll thank me later 😌 * 3 cups cooked jasmine rice, chilled * 1 tablespoon vegetable oil * 1/2 pound ground chicken or pork * 2 tablespoons fish sauce * 2 tablespoon granulated sugar * 1 tablespoon lime juice * 1/2 teaspoon chili flakes * 1/2 cup chopped fresh cilantro * 1/4 cup chopped fresh mint * 1/4 cup chopped green onion * 1 thinly sliced shallot (medium sized) * 1/4 cup chopped fresh Thai basil * 2 tablespoons roasted rice powder * 2 tablespoons chopped roasted peanuts Instructions: 1. Heat the vegetable oil in a wok or large frying pan over medium-high heat. 2. Add the ground chicken or pork and cook, stirring frequently, until browned and cooked through. 3. In a small bowl, whisk together the fish sauce, palm sugar, lime juice, and chili flakes. 4. Add the chilled cooked jasmine rice to the wok or frying pan and stir to combine with the ground chicken or pork. 6. Add the fish sauce mixture to the wok or frying pan and stir to combine. Cook for 2-3 minutes, or until the rice is heated through. 7. Press the rice down on the wok and let it sit for 2 minutes then toss again and repeat this step 5 times or until the rice starts to dry out and starts to be crispy 8. Remove the wok or frying pan from the heat and add the chopped cilantro, chopped mint, chopped green onion, chopped red onion, chopped Thai basil, roasted rice powder, and chopped peanuts. Stir to combine. 9.
