Bravo Brazilians 👏 Ingredients Cake batter - 3 eggs - 140g neutral oil (vegetable, light olive oil, rapeseed, etc.) - 225g carrots, roughly chopped (around 2-3 carrots) - 220g caster sugar - 225g plain flour - 1 tbsp baking powder - 1/2 tsp baking soda Chocolate ganache (not traditional but delicious) - 200g dark chocolate, roughly chopped - 100g heavy cream (I used vegan cream) Method: Chuck all the cake batter ingredients in a blender and blitz until smooth. Bake in a lined cake tin for 40-45 mins, or until cooked through. Heat the cream till almost boiling, then pour over finely chopped chocolate and mix. Wait to cool for a thicker ganache.
