Kofte is Turkish comfort food, and one of our favorite things to make in bulk, freeze and eat whenever the mood strikes us. There are as many recipes for kofte as there are families in Turkey. This one is ours. They can be cooked in the oven, but my favorite way is to fry them in oil. They're crispy on the outside and soft as angel food cake on the inside. If you haven't had Turkish meatballs before, this is your sign. You can serve kofte with almost anything - fried potatoes, salad, ketchup and mayo are Turkish favorites. I usually serve them on a simple lettuce and onion salad dressed with olive oil, lemon juice, garlic and salt with a side of toasted crusty bread. Afiyet olsun (bon appetit) Kofte Recipe 1kg ground beef Sparkling water or baking soda Panko bread crumbs or stale bread 1 large onion or 2 medium 1 bunch parsley Ground cumin to taste Salt + black pepper to taste Pul biber (Turkish red pepper) - optional Thyme to taste Finely dice onion and parsley or run through a food processor. Add everything to ground beef and mix very well with your hands. Mixing well will make the kofte super soft and delicious. Bake in oven for about 15 minutes at 425 or fry in oil until golden brown. #köfte #kofte #kofte #turkishfood #comfortfood #meatballs
