✨ THE 12 DAYS OF BREADMAS ✨Day 5: Cinnamon Roll Focaccia  INGREDIENTS: For the bread: 1 batch focaccia dough (same day, overnight or sourdough) - click the FOCACCIA TUTORIALS playlist above my grid) 6 tablespoons (70g) sugar 1 heaping tablespoon (7g) cinnamon  2 tablespoons salted butter, melted  1.5 tablespoons Turbinado or Demerera sugar to sprinkle over the top before dimpling.  Cream cheese icing drizzle 5 Tablespoons (75g) cream cheese, room temp 1.5 Tablespoons (23ml) milk  1/2 cup (60g) icing/powdered sugar  1/4 teaspoon vanilla extract  1/8 teaspoon cinnamon  METHOD Mix together the cinnamon and sugar. Use any of my focaccia recipes to make the dough but incorporate 2 tablespoons of cinnamon sugar during each of the two stretch and folds (as shown in video). If you’re making overnight or sourdough focaccia, place the dough into the fridge overnight after the second stretch and fold. If using same day dough, proof in bowl for about 1-1.5 hours.  Tip into the prepared tray, stretch the dough to the edges of tray and scatter over the remaining cinnamon sugar before folding the dough into thirds. Flip so the smooth side is on top and proof in tray for another 1-1.5 hours (up to 2 hours if using overnight dough).  Drizzle over salted butter and sprinkle over the Turbinado sugar. Dimple and bake at 210C/410F for 18-25 minutes until golden.  While it’s baking, whisk together all ingredients for the icing until smooth and drizzle over the top when still warm from the oven. Enjoy immediately!  If using later, leave the focaccia un-iced and reheat the bread wrapped in foil in the oven.
