Cover the bowl with cling film or a lid and place into the refrigerator for at least an hour. For the Firecracker Sauce, add all the sauce ingredients to a bowl and mix well. Once mixed transfer into a jar or bottle. This will last in a refrigerator for months. To make the crispy chicken coating add the crispy coating ingredients into a bowl and whisk together. Remove the chicken from the refrigerator. Take out one of the marinated chicken thighs and place into the coating flour and coat both sides in the flour, tap off the excess flour and place the thighs on a plate, repeat this process with the remaining chicken thighs. Now repeat the process, place a thigh back into the milk marinade and then back into the flour, this time press the thigh firmly into the flour on both sides tap off the excess flour and rest on a plate. Heat the oil to 160 degrees then using tongs gently lower the coated thighs into the oil. Cook until golden brown, use a meat thermometer to check the chicken is cooked. Remove from the oil and place on a wire rack to drain. To plate up, toast the burger buns and add some mayonnaise to the top and bottom, place coated chicken thighs into a bowl and pour some firecracker sauce over the top and coat on both sides, as much or as little as desired. Place the chicken onto the bun base, top with lettuce, tomato slice and onions top with the bun top, and serve with fries or wedges.
