You NEED to try these Raspberry Lemon Cheesecake Muffins with crumbly streusel! 💛🍓 Moist, tangy, creamy, and crunchy in every bite! 🌷 • Ingredients • Muffin Batter: • 120g unsalted butter, softened • 120g granulated sugar • 2 tsp lemon zest • 2 large eggs • 10g lemon juice • 2 tsp vanilla extract • 300g all-purpose flour (reserve 1 tbsp for tossing raspberries) • 6g baking powder • 1,5g baking soda • 120g milk Raspberries: • 240g fresh or frozen raspberries Cheesecake Filling: • 150g cream cheese, softened • 50g sugar • 1 tsp vanilla extract • 10g flour • 10ml milk Raspberry Jam: • 150g raspberries • 30–50g sugar (to taste) • 1 tsp lemon juice • ½ tsp cornstarch mixed with 1 tsp water Streusel Topping: • 60g flour • 100g sugar • 56g cold butter • Pinch of salt 🌷 • Instructions • 1️⃣ Preheat oven to 170°C (340°F). Line muffin tin with liners or grease well. 2️⃣ Make streusel: Mix flour, sugar, and salt. Add cold butter and crumble it with your fingers or fork until it looks like wet sand. Chill until ready to use. 3️⃣ Make raspberry jam: • Heat raspberries, sugar, and lemon juice in a small pot until boiling. • Stir in cornstarch mixture and cook 1–2 mins until thickened. Cool completely. 4️⃣ Make cheesecake filling: Beat cream cheese, sugar, vanilla extract, flour, and milk until smooth. Set aside. 5️⃣ .
