@maxiskitchen: Scallion pancake egg and cheese✨ . ▪️2 tsp Avocado Oil or Olive Oil▪️1 Frozen Scallion Pancake (@traderjoes has a great one)▪️2-3 Eggs▪️Salt & Pepper▪️2 Slices American Cheese▪️1-2 tsp Chili Oil▪️6-8 Fresh Basil Leaves▪️ . 1️⃣ Beat eggs with salt and pepper and set aside 2️⃣ Coat a pan with avocado oil and cook the scallion pancake over medium heat for 1-2 mins on the first side until golden brown; remove from the pan (you will cook the other side later) 3️⃣ Coat the pan with oil again and pour the eggs into the pan; immediately place the scallion pancake over the eggs, cooked side facing down 4️⃣ Cook for 2-3 mins (until eggs are cooked through) and then flip so that the uncooked side of the pancake is in contact with the pan and the eggs are facing up 5️⃣ Add the cheese, chili oil, and basil and cook for 1-2 mins until cheese is melted and pancake is golden brown 6️⃣ Transfer to a cutting board and roll it up, slice and half and enjoy! . ⏲10 minute total prep + cook time .
