@cassyeungmoney: Replying to @anna.kathryn.rn im so pleasantly confused #watermelonrindkimchi #kimchi Rind of 1/2 large watermelon 1/4 cup salt 3 green onion stalks 1/4 cup julienned carrots 1/3-2/3 cup gochugaru (Korean chili flakes) 1/4 cup fish sauce ~2 cups watermelon flesh 1/4 of an onion 2 garlic cloves Small piece of ginger Peel the skin of your watermelon rind and chop into cubes or desired shape. Massage well with salt then love her, leave her alone until moisture is drawn out (I could’ve done this longer for them to be softer, but I’m impatient 🤪). Meanwhile, julienne your carrots and chop green onions into 1 inch pieces. Add your watermelon flesh, ginger and garlic to a blender. After your watermelon has softened and had drawn out some moisture, rinse well and squeeze out any excess water. Add in your veggies, watermelon juice mixture, gochugaru, fish sauce and mix well. Enjoy immediately or even better the next day.

I’m just curious as to how long you left the salted rind for? With Napa cabbage = 2hr (mix every 30 min), but maybe the rind ideally 3-4 hours?

when working with watermelon rinds a 5 min parboil helps it. it will still crunch, but it is no longer hard. do that before the salt.
