@macrosandmovement: This cookie recipe would be so good paired with some berries and sugar free whipped cream or made into little sandwiches with sugar free jam. Thanks to @SAM GWAZ for the inspiraiton. Ingredients: -2 egg whites -35g 0 cal powdered sugar -1 tsp lemon juice -1/2 tsp vanlla extract Instructions: 1. Whisk egg white until bubbles start to form (about 2 minutes) 2. Add lemon juice and whisk until mixture becomes extra frothy, about 2 more minutes 3. Slowly add sweetener 1 tbsp at a time until mixture becomes silky and voluminous 4. Once the sweetner is in, add the vanilla and continue mixing until stiff peaks form 5. Pipe little bite size shapped onto a baking sheet lined with parchment paper (you can also just to dollops from a spoon) 6. Bake at 200 for 40-45 minutes and then turn the oven off and leave the pan inside the oven for another hour 7.
