@adip_food: Carrot and Butter Beans - Another Day In Paradise Ingredients || serves 2 8 carrots 1 large white onion thinly sliced 4 cloves garlic thinly sliced 4 sprigs thyme 1/2 cup white wine, stock, or water 1 tin butter beans with liquid 1/2 lemon juice 1 tbsp cider vinegar 2 tbsp Olive oil Salt to taste Garnish 2 tbsp flaked almonds 1 jalapeño minced parsley finely chopped Squeeze of lemon Pinch of salt & sugar Peel the carrots before steaming for 7-10 minutes. Shock in cold salted water. Cut lengthways and fry in on a medium heat with a generous amount of olive oil - ideally with a weight (you can use a heavy pan). For the bean purée add the thyme, onions, and garlic to a pan with a generous amount of olive oil. Sauté on a medium heat until soft and lightly browned - add the wine and simmer for about 5 minutes. Transfer to a blender along with lemon juice and vinegar. Blend for 2 minutes on a medium speed - then an additional 2 minutes on high. Add a splash of water to loosen if needed. Season with salt to taste. Toast the almonds and chilli in the same pan that you cooked the carrots for about a minute. Add the parsley, lemon juice, olive oil, and a pinch of salt and sugar. #fyp
