Valentine’s Day may be over, but it’s NEVER too late to make my chocolate covered strawberry cookies! ♥️  INGREDIENTS:  -1 cup (2 sticks) butter, browned  -1 1/4 cup brown sugar  -1/2 cup granulated sugar  -2 eggs  -2 tbsp vegetable oil  -2 tsp vanilla extract  -3 cups all purpose flour  -1 tsp baking soda  -3/4 tsp salt  -1 cup fresh or freeze-dried strawberries, diced  -1 bar semisweet or dark chocolate, chopped  -1 1/2 cups semisweet chocolate chips  INSTRUCTIONS:  1. Start by making the brown butter. Place butter in a light colored pot over medium heat. Once the butter has melted, adjust the heat to medium-high and continually whisk until the butter has browned to a nice amber color. This should take about 4 minutes. Remove pan from the heat and transfer the brown butter into a heat-proof bowl to cool.  2. In a mixing bowl, add the slightly cooled browned butter, brown sugar, granulated sugar, eggs, vegetable oil and vanilla extract. Mix until fully combined.  3. In a large bowl, mix the flour, baking soda and salt.  4. Pour the wet mixture into the dry ingredients and gently mix until everything is just combined.  5. Add in your fresh or freeze-dried diced strawberries, chopped chocolate and chocolate chips and stir to combine.  6. Using a large cookie scoop, form scoops of cookie dough and place them on a baking sheet. Place the cookie scoops into the fridge to chill for about 30 minutes to 1 hour.  7. Preheat oven to 350°F.  8. Remove the cookie dough from the fridge and place on a parchment lined baking sheet.  9. Bake for 10 minutes, then once out of the oven, add more chopped chocolate and flaky salt to the top, then let the cookies rest for at least 30 minutes.  10. ENJOY! 🍪🍓
