3 LEVELS OF BANANA 🍌 Red Banana or Morado is one of the many varieties you’ll find in the Philippines. It develops a nice red hue when ripe, with a smooth, sweet, and creamy flesh inside. It looked so cool I wanted to try using it for 3 easy recipes you can do at home! Most measurements are estimates. Adjust to your liking :) INGREDIENTS LEVEL 1 — BANANA FOSTER - 3 Morado bananas - 6 tbsp (85g) unsalted butter - 1/2 cup brown sugar - Pinch of salt - Vanilla extract, to taste - 1/2 tsp cinnamon - 1/4 cup (60ml) rum - Macapuno ice cream, for serving - Crushed pecans, for serving LEVEL 2 — BANANA BALLS - 8 ripe Morado bananas, mashed, for wet batter - 2 eggs, for wet batter - 1/2 cup evaporated milk or water, for wet batter - 1/2 tsp salt, for wet batter - 1 tsp vanilla, for wet batter - 1/3 cup sugar, for wet batter - 2 cups plain flour, for dry batter - 1/2 cup cornstarch, for dry batter - More chopped bananas - Oil, for frying - Powdered milk, for coating LEVEL 3 — UPSIDEDOWN BANOFFEE PIE - 1 1/2 cups crushed Biscoff, for crust - 7 tbsp browned salted butter, for crust - 1/2 cup salted butter, for toffee - 1/2 cup coconut sugar, for toffee - 8 oz condensed milk, for toffee - Pinch of salt, for toffee - 1/2 tbsp cinnamon, for toffee - 1 tsp vanilla, for toffee - 2 Morado bananas, sliced, for layering - 1 1/4 cups heavy cream, for whipped cream - 1/4 cup sugar, for whipped cream - 1 tsp vanilla, for whipped cream INSTRUCTIONS BANANA FOSTER Melt butter with sugar, cinnamon, salt and vanilla. Add bananas, caramelize, then add rum and flambé. Serve with macapuno ice cream and pecans. BANANA BALLS Mix wet batter, then dry batter and chopped bananas. Fry scoops until golden, then coat in powdered milk. BISCOFF BANOFFEE PIE Mix crust, press into container. Cook toffee until thick. Whip cream with sugar and vanilla. Layer with sliced Morado.
