🚨BONUS EP🚨 A classic that I just had to add into the series now that we’re half way through! Chicken boscaiola. I’ve posted this before but after a lot of requests, I decided to include it in the series. Hence why it’s a bonus ep. Which also means the recipe is below!!! 👇🏼  Ingredients for 4:  200g spaghetti (trust me, you don’t need a lot of pasta for this)  Chicken:  1 tbsp olive oil  500g chicken breast, thinly sliced on a diagonal  1 tsp garlic powder  1 tsp onion powder  Salt and pepper  Sauce:  1 tbsp butter  1/2 tbsp olive oil  1 shallot, finely diced  Salt and pepper  1/2 brown onion, sliced  300g bacon, diced  200 Swiss mushrooms, sliced  1 tbsp fresh parsley, finely chopped  3 garlic cloves, finely diced  300ml cream  1/2 cup freshly grated Parmesan  To finish:  Freshly chopped parsley  Freshly grated Parmesan  Method:  1. Put a large pot of water on the stove on medium-high heat and salt heavily until it tastes like the ocean.  2. In a pan on medium heat with olive oil, add the chicken with salt, pepper, garlic and onion powder. Remove from the pan once cooked 50-60% of the way through.  3. In the same pan on medium-low heat with butter and olive oil, sauté the shallots with more salt and pepper.  4. Once softened and fragrant, add the sliced onions and bacon and cook for 2-3 minutes.  5. Add the mushrooms and sauté together.  6. By now the water should be at a rolling boil. Add the spaghetti and stir for the first 30-60 seconds to prevent sticking.  7. Add the fresh parsley.  8. Add 1/2 cup of starchy pasta water to deglaze the bottom of the pan.  9. Add the garlic (don’t forget like I almost did) and cook until fragrant for approximately 30 -60 seconds before adding the chicken back into the pan followed by the cream.  10. Lower the heat and let the sauce simmer away and marry together while the pasta cooks.  11. Once the spaghetti reaches AL DENTE (super important), add to the pan and allow the pasta to finish cooking in the sauce.  12.
