Preheat your oven to 250°F (121°C). 2. Spread the fermented cocoa beans evenly on a roasting pan or baking sheet. Make sure they evenly distributed for even roasting. 3. Roast the cocoa beans in the oven for about 20-30 minutes, and make sure to stir the beans every 10 minutes for even roasting. 5. Keep in mind roasting time will vary. Key indicators are: rich, chocolatey aroma, a slightly darker color, popping sounds, and cracked skin. 6. Once the cocoa beans are roasted to your desired level, remove the pan from the oven and set it aside to cool. 7.
