@lesswithlaur: Day 16 of my 30 Days of Gluten-Free and Dairy-Free Summer Recipe Series I made these delicious blood sugar-friendly Thai chicken lettuce wraps! They are so refreshing and perfect for summer. These lettuce wraps are honestly one of my favorite meals I have ever made! By incorporating protein, fats, and fiber into your meals, this allows for the prevention of large blood sugar spikes and crashes. The ground chicken is the main protein source, the vegetables give us lots of fiber to keep us full and the nut butter and coconut aminos add in healthy fats. When we give our carbs “a buddy”, this slows the release of glucose into your bloodstream and allows for your body to achieve a stable blood sugar level, as opposed to going on the blood sugar rollercoaster that some of us may have experienced. I am currently using a @Veri CGM to track my blood sugar ($30 off in my bio). It has been so insightful because I am able to see how my body reacts to certain foods and also lifestyle factors (sleep, exercise, stress, etc). This meal was rated a 9/10 on the Veri app because it kept my blood glucose levels stable. Try it for yourself! THAI CHICKEN LETTUCE WRAPS: 1 package butter lettuce 1 package ground chicken, cooked 2 shredded carrots, finely chopped 2 green onions, finely chopped 1 tsp shredded ginger 1 clove garlic, minced 2 tbsp sunflower butter or nut butter 2 tbsp coconut aminos Dash of salt Combine chicken, carrots, green onions, ginger, garlic, sunflower butter or nut butter, coconut aminos and salt in a large bowl.
