Here’s how I made this “sour in a GOOD way” loaf:  I fed my starter that I normally keep at 75f in my @Brod & Taylor Sourdough Home at a 1:5:5 ratio. I did this first thing in the morning. This recipe will make 2 loaves.  I mixed 10g starter, 50g whole wheat flour and 50g cold water and placed it in my Sourdough Home at 84f. Yes, that warm! That’s the whole point!  12 hours later, at 10pm, I mixed that starter with 650g water, 100g whole wheat flour, 900g all purpose flour and 20g salt. I did this right before bed, and I used my mixer for 10 minutes to make sure the dough was fully developed. If you’d prefer to hand mix, do this an hour or two before bed and give the dough a fold or two. Make sure you hand mix for 3-5 minutes as well.  In the morning, at about 8am, I shaped the 2 loaves and put one in my Prooferpro at 84f for 2.5 hours. Don’t fret if you don’t have one, I left the second loaf in the warmest spot in my house for 4 hours and baked it then, and it also came out wonderfully. This dough is low hydration and very forgiving. If you’re worried about scoring warm dough, put it in the freezer or fridge for 30 minutes after the time in the proofer.  Then I baked it in a preheated Dutch oven for 20 minutes, covered, at 475 and then reduced the heat to 450 and baked it another 18 minutes, uncovered. The result was awesome!
