Let's prepare PASTEIS DE NATA with our Melissa 🌹  👉INGREDIENTS for about 15/20 pieces: 2 rolls of rectangular puff pastry 📌For the cream: 200ml (3/4 cup) water  550ml (2 1/3 cups) milk  15g (1 tbsp) cornstarch  1 pinch of salt 6 egg yolks 2 whole eggs 400g (2 cups) sugar  55g (1/3 cup) flour  1 cinnamon stick Lemon zest, to taste 📌For finishing: Butter, to grease Ground cinnamon, to taste Powdered sugar, to taste 📌 For glazing: 50ml (3 tbsp + 1 tsp) hot water  50g (1/4 cup) sugar  👉METHOD 1. Roll out the puff pastry and roll it up from the shorter side, forming a tight cylinder. Wrap it in plastic wrap and let it rest in the fridge for about 20 minutes. 2. Meanwhile, butter the aluminum molds (like muffin molds, but shorter). Once the puff pastry cylinder is well chilled, cut it into equal parts. 3. Take each small roll and place it in the center of the mold, with the spiral facing up. Wet your fingers and, starting from the center, press the dough upwards to completely line the sides of the mold. Repeat for all. 4. In a saucepan, place the water, sugar, lemon zest, and cinnamon stick. Bring to a boil and let simmer for 2 minutes. Strain and set the syrup aside. 5. In another saucepan, combine the flour, cornstarch, and salt. Gradually add the milk, whisking to avoid lumps. Cook over low heat until it thickens slightly, stirring constantly. 6. Remove from heat and pour the syrup into the cream in 3-4 additions, mixing well each time to combine. 7. Once the cream has cooled, add the egg yolks and whole eggs. Stir until you have a smooth, homogeneous mixture. 8. Pour the cream into the puff pastry shells, filling them about three-quarters full. 9. Bake in a convection oven at 250°C (482°F) on the middle rack for about 25 minutes. If necessary, move the tray to the top rack and turn on the grill for 5 minutes to achieve the typical browning on top. 10. Remove from the oven and, if desired, brush with a mixture of hot water and sugar to add shine. Sprinkle with cinnamon or powdered sugar before serving.
