@auriscuisine: Jollof rice ( Tips) No I’m not giving away my recipe but I feel these tips are actually more useful than my recipe! Also this is NOT the place to start jollof wars, grow up! 1. Please use enough onions and aromatics! The base is super important and is essentially the foundation of your stew. I’m Ghanaian so the base of our stews contains, onion, garlic, ginger, scotch bonnet etc. 2. Use enough purée! Purée gives your jollof that red colour so please ensure you’re adding enough and also let it fry and the flavours release. 3. Make sure the brand of tomatoes you’re using is not bitter!! Sometimes stew will naturally have a bit of a bitter taste, you can use brown sugar or baking soda to help. Also ensuring you’re letting your stew cook our enough can also be a contributing factor to the bitterness. Sometimes the tomatoes just need to cook a little more. 4. I don’t use any water in my jollof! You don’t need water for the rice to cook 🙄 that’s why there’s the stew. If you have enough stew you shouldn’t need to add water! 5. The no adding of water part can’t apply to everyone because of the rice, so brand of rice is very important., some types of rice isn’t for Jollof

In order to avoid bitter stew, fry the tomatoes sufficiently. The type of tomato does not matter as much as how long you fry it for 🧏🏿♀️
