In South Dakota, they bale the thistle because the cows will be hungry enough come winter to eat it

we run them through the haybine, and then they eat them. molasses works too. we had a herford bull that just picked off the flowers.

My mom told me that when she was young, it was against the law to allow thistle to grow on your farm. She died at 94 a couple of years ago.
