I've been a chef for 13+ years; 100% dirt, grime, etc. You usually need a floor cleaning machine or power washer to clean tile in any resto setting.

The grout between those quarry tiles is epoxy. That is residue from the enzyme cleaners. So, dirt and grime, yes.

It looks just like the pizza place I used to work at, and in our case it was dirt and grime. That stuff really doesn’t come off without just scraping

Worked for Stanley Steamer. Did tile and grout. Grout doesn’t come up that easily.

floors must be scrubbed with a scrub brush each night. mops don't cut it. I've fired GMs over this before. laziness.

It's dirt, grime and food. I worked at McDonald's and I would change my shoes outside my house, because it stains my floors and carpet black!
