Apple Pie Bread Pudding 🍎 Ingredients: For the apple filling: 800 g apples 50 g butter 20 g flour 120 g muscovado sugar 120 ml water 2 tbsp lemon juice 1 tsp cinnamon ¼ tsp nutmeg ¼ tsp ground ginger For the custard: 240 ml milk 200 ml heavy cream 35% 20 g butter 50 g sugar 4 eggs 1 tsp vanilla extract 1 tsp cinnamon ¼ tsp nutmeg ¼ tsp ground ginger A pinch of salt Brioche bread Melt the butter in a saucepan. Add the flour, cinnamon, nutmeg and ginger and mix well. Add the muscovado sugar, apples, water and lemon juice. Cover and cook for 10–15 minutes, stirring occasionally, until the apples are soft. Remove from the heat. Strain the apples and reserve the liquid for serving. For the custard, combine the milk, cream, butter, sugar, vanilla, cinnamon, nutmeg, ginger and salt in a saucepan. Heat gently until the butter melts. Do not boil. Remove from the heat and whisk in the eggs one at a time. Layer the brioche and apples in the baking dish: brioche → apples → brioche → apples → brioche → apples. Pour the custard over the top and gently press the brioche down so it absorbs the mixture. Bake at 175°C, top and bottom heat, for 35–40 minutes. Serve warm with vanilla ice cream and the reserved apple sauce.
