@spicymoustache: Did you know that you could eat every part of a courgette plant including leaves, stems and flowers? INGREDIENTS - 2 x large courgette - 200g x amaranth or quinoa - 2 x red onions - 4 x garlic cloves - 150g x peas - 4tbsp x olive oil - salt - black pepper - optional: any spice or herbs you prefer - garnish : rocket,tomato & sesame seeds - PREPARATION 🥣 -finely chop onions and garlic cloves and stir fry them with olive oil until golden -add amaranth or quinoa and cover with water -cook for 10 min and add the peas ,salt ,black pepper and any spices you prefer. -cook all together for around 20 min -add some extra water if it starts to dry out -cut the courgettes in half and scoop out the middle soft bit (use for a pasta sauce) -add the filling -bake for around 30/40 min -serve on a bed of rocket,sesame seeds and fresh tomatoes.
