Slow Cooker Chicken Fajita Pasta 🤤🔥 Dump everything in, leave it for a few hours and you’ve got a creamy, cheesy, high protein dinner waiting for you with hardly any effort.  Perfect for busy days, meal prep, or when you just cba to cook but still want something banging 🤌🏼 Let me know if you want more slow cooker recipes 🥰 Ingredients (serves 4):  Chicken 400g chicken breast, diced
3 tsp fajita seasoning  Base 1 onion, finely diced
1 red pepper, diced

60g mozzarella, grated 30g tortilla chips, lightly crushed (I used Chilli heatwave) Fresh coriander, chopped (optional) 💞Add all of the base ingredients to the slow cooker and stir to combine. 💞Season the diced chicken breast in a bowl with the fajita seasoning until evenly coated, then add it to the slow cooker and stir everything together. Cover and cook on high for 1 hour 30 minutes or low for 3 hours, until the chicken is cooked through and the vegetables have softened.  The sauce will look thin before the pasta is added, but the pasta will absorb the liquid as it cooks. If needed, add a splash of hot water or stock to loosen the sauce. 💞Stir in the pasta, ensuring it is mostly submerged in the sauce. Replace the lid and cook for 15-20 minutes on high (or 25-30 minutes on low), stirring once halfway through, until the pasta is tender. Check the pasta after 15 minutes as some slow cookers cook faster than others. 💞Stir through the cream cheese until melted.  💞Sprinkle over the grated cheddar and mozzarella, then cover with the lid again for 5-7 minutes until the cheese has melted. 💞Add the tortilla chips just before serving so they stay crunchy along with the fresh coriander.
