Merry Scranmas you lovely lot! @elburritomonster here to show you a proper way to serve up your Christmas leftovers! Skip the turkey sandwiches and make a wellington instead🤪 For the yorkie you’ll need 3 large eggs with the same volume milk (semi skimmed or whole) and plain flour, with a tsp salt or 1/2 tsp salt 1/2 tsp MSG - and keep this cool in the fridge for 30 or freezer for 15 til it’s good to go. Get a 8 x 12 inch thin aluminium oven tray with 2 inch high walls with a thin layer of sunflower oil in the oven in the bottom at 220 for 15 mins. Pull it out, pour in the batter just enough so it touches all the sides and back in the oven. After 10 minutes, reduce the heat to 180C and cook for a further 10-14 minutes. Wrap all your Christmas leftover with the help of some big ole foils into a big log and pop in the fridge. For the duxelle you’ll need 1 diced onion with about 500g grated mushrooms reduced heavily reduced. Pinch of salt, splash of vinegar, possibly wine, and as much garlic as your heart desires🥰 Just make sure you get all the moisture out that bad boy. Lay out maybe 12 slices of prosciutto on a couple of overlapped pieces of cling film. Use a bit of year 7 Maths with the classic 2πr to work out how far you need to lay it out and at least an inch wider at both ends, and spread your mushrooms all over. Lay on your yorkie burrito and use the cling film so roll it up, pinching the ends and squeezing it all together into a really tight log. Then do the same thing with that log and an egg washed pieces of puff pastry, using your maths skills again to work out if you need to roll it out a bit more. Use any spare pastry for decoration stuck on using egg, and egg wash the whole thing and add a few salt flakes and bake for 40-70 minutes at 180-200C. Low and slow for the bigger wellingtons, as we don’t want the pastry to burn before the heat has reached the middle. For the chonky boy in this vid it was 70 mins at 180C.
