Kibbi Nayeh is raw lamb mince mixed with burghal and is as delicious as it looks.  Many Middle Eastern countries wouldn’t dream of eating raw meat but the Lebanese people love it and it’s a popular entree served in Lebanese restaurants everywhere.  The better the “kamouneh” you can find, the tastier the dish will be. We grind the mixture to an almost powder consistency then add to the rest of the ingredients.  Recipe ⬇️ 500gm kibbi mince (you have to specifically ask for it at an Arab butcher)  1.5tbsp Kamouneh (spice mix found in good Arab grocers)  1/2 brown onion  Small piece of red capsicum  A couple of fresh basil leaves  3 red Birds Eye chilli (optional)  2 mint leaves  2 rose leaves (optional)  2 pieces of dried cloves  2tsp salt  Black pepper  White pepper  1/2 cup fine brown burghal unwashed  4 tbsp olive oil for mixing  Extra olive oil for serving  Mint leaves for garnish  Method  Place kibbi mince in freezer for 20min while prepping the mix.  Finely grind the kamouneh spices to a powder consistency.  In a small processor, add the onion, capsicum, basil, kamouneh, mint, salt and pepper, cloves, chilli and rose petals if using. Blend until finely processed.  Add the burghal and process again until combined.  Tip the mixture in to a bowl and add the kibbi mince. Mix with your hand while slowly adding the olive oil until it all comes together. Test for salt and add if needed.  Spread on to a plate and drizzle with extra virgin olive oil and garnish with fresh mint and radish if you have. Enjoy with Lebanese bread.  #kibbeh #kibbehnayeh #lebanesefood
