Nothing crazy but wanted to share this “Trashcan Salmon” - I learned it from a friend and passing it along to you. After catching salmon - the first thing I eat is the carcass. Which is typically what so many throw out! Last year after my first salmon trip - my friend showed me this little trick with the salmon and it was a total game changer. In the past, I had just used the carcass for stock with most fish - but with salmon or some more meatier fish, there is still so much meat, very good meat left on there that you could pull it off and use it for all types of stuff. This one carcass turned into four meals! You can use it for protein, bowls, sandwiches, nachos, egg rolls, or what I did - lettuce cups. Super straightforward method too - Just take the fish carcass, and season it with a simple rub. Rubbed it down with a little olive oil and soy sauce and got it on the grill 400°, between four and five minutes each side. Make sure those grates aren’t dry and have a little oil on them, and use spatulas to carefully flip the fish over Since I was using this for lettuce wraps, I added some Ponzu sauce and some lime to it after I took it off the grill. then simply pull away with a fork to grab your meat and a simple your cups or whatever else you’re using the Meat for. Just make sure towards the tail you keep an eye out for some of the smaller bones, but for the most part, we didn’t have much trouble with that.
