Muffins for mystery boy who isn’t a mystery anymore ❤️‍🔥 #yourewelcome RECIPE: ▫️2 ripe bananas, mashed ▫️1/2 cup sourdough discard ▫️2 eggs ▫️1/2 cup coconut oil ▫️1 cup organic brown sugar ▫️1/2 cup organic cane sugar ▫️1/2 cup plain greek yogurt ▫️2 tsp vanilla extract ▫️1/2 tsp espresso powder ▫️1 1/3 cups all-purpose flour (I use @Jovial Foods einkorn flour!) ▫️1 tsp cinnamon ▫️1/2 tsp nutmeg ▫️2 tsp baking powder ▫️1/2 tsp baking soda ▫️1 tsp salt ▫️1 cup semi-sweet chocolate chips ▫️1 cup walnuts, chopped (optional) Mash two ripened bananas using the back of a fork. Combine all wet ingredients with bananas, then add in dry ingredients. Fold in chocolate chips. Line a muffin tin and use an ice cream scooper to evenly distribute batter into each muffin cup. Bake at 425°F for 10 mins, then lower oven temp to 350°F and continue baking for 8 more minutes.
