Instructions: Salmon: Chop salmon into cubes, season with garlic powder, paprika, chilli flakes, honey, and juice from half a lemon. Cook salmon on the stove for about 2-3 minutes on each side (increase or decrease cooking time depending on the thickness of the fish). Cucumbers: Chop cucumbers into a bowl. Season with rice vinegar, garlic, soy sauce, chilli flakes, and paprika. To a bowl of rice, add cooked salmon pieces, cucumbers, steamed edamame beans, carrots, and sliced avocado, top with sesame seeds, green onions and sriracha mayo sauce (recipe below).
