Part of the whiskey aging process is the temperature changes with the seasons that draw the liquid into and out of the wood. Maybe add temp changes?

with regular whiskey they swap the barrel after some time. so swapping in new wood pieces makes sense. also they aren't perfectly sealed.

You are probably gonna hit a wall with how much aroma you can get out with soju. Whisky is aged at a high abv and the watered out.

get an ultrasonic cleaner machine. vibrate small batches, and you'll get something close to 12 years of ageing I'm a few hours
