350g of flour and 315g of water mixed up are too watery, needed to add more flour

halu I'm a newbie baker. I have some questions
Q1. How long should we preheat our oven?
Q2. How long does final proof takes? Do we just eyeball it? or do we need to weigh it?
TQ in advance 🙏

I like the multiple rises; learned long ago, the more it rises, the fluffier it gets.
