Plus, it’s ridiculously delicious; with the creamy almond ginger dressing and all the fresh veg, it’s a great combination of texture and flavors. So make sure you give it a go 💛 Serves 4 Ingredients: - 3 cups edamame (thawed) - 2 cups cooked black rice (150g uncooked) - 4 cups shredded red cabbage - 1/2 lime juiced - pinch of salt - 1 cucumber large diced - 1 cup cilantro chopped - 2 scallions chopped - 4 tbsp kimchi - 4 tsp sesame seeds - 1 avocado diced (optional) Ginger Almond dressing: - 2 tbsp almond butter - 1/2 lime juiced - 1 tbsp fresh ginger - 1 tbsp tamari - 1/2 tbsp maple syrup - 1 tbsp rice vinegar Instructions: 1. Blend the dressing ingredients. 2. Massage the cabbage with 1/2 lime juice and a pinch of salt. 3. Pour the dressing at the bottom of the container, followed by the edamame, rice, cabbage, cucumber, cilantro, scallion, and kimchi. 4.
