@vannisaterala: Part 58. Mango Matcha Cake. Another dessert for thise romantic nights in or picnic date. Ingredients 1 ripe mango 1 cup heavy cream 1/4 cup powder sugar 2 tbsp granulated sugar 1 tsp vanilla extract 1/4 cup water ( you can use any cake you like) Sponge cake 3 eggs room temp 60 grams sugar 90 grams of cake flour 1/2 tsp vanilla extract 30 grams canola oil 1 tbsp matcha powder 6 inch baking pan Directions 1. Preheat oven to 330F. 2. Mix together eggs, vanilla and sugar. Whip until you get a soft peak and the batter turns pale yellow. 3. Slowly fold in the flour 1/3 at a time. Remove 1/3 of a cup of batter into a bowl with the oil. Mix them together until well incorporated. 4. Return the mixture to the egg and flour mix and fold carefully. 5. Pour batter into a 6 inch baking pan and bake for 30 minutes. 6. Let it cook and slice. Assembly. 1. Heat up the sugar and water to make simple syrup. 2. Whip the heavy cream with powder sugar and vanilla extract to stiff peak. 3. Layer the cake into your container. Brush or pour the simple syrup. 4. Add the whip cream and top with mango.
