Okra is soooo underrated. Serves 2 (they are very addictive you could eat it all by yourself) 250g okra 50g cornflor 1 onion 4 cloves garlic 1 red chilli Spring onion Spice mix 1 tsp MSG 1 Tsp Sugar 1/2 tsp salt 1 Tsp Ground White Pepper ½ Tsp Garlic Powder ½ Tsp Onion Powder 1/2 tsp Chilli powder Pinch of Sichuan Powder Vegetable Oil for deep frying Method Chop up the okra into small bite sized pieces. Chop up the onion and spring onion, slice the chilli and finely chop the garlic. Mix all the ingredients for the spice mix Add the okra to a bowl with the corn flour and 3 tbsp of water. Toss very well, you want a slightly dry batter. Heat up your deep frying oil to medium and fry the okra in batches for 3 - 4 mins until crisp. If you want it even crispier, heat the oil to high and fry again for 30 secs. Heat up a wok to high and add in a glug of oil. Fry the onion, garlic, chilli and spring onions for a few minutes then add in the fried okra. Sprinkle a generous amount of the spice mix, you may not want it all - taste as you go. Toss well. Serve hot.
