@gatherednutrition: Best easy healthy summer dinner 1.5 lbs chicken breast, cubed 1 yellow squash or zucchini, thinly sliced 1 red onion, cut into large wedges 2 bell peppers, cut into large cubes 1/2 cup of your favorite vinaigrette (I like a red wine vinaigrette here) 1 tbsp oregano Salt and pepper, to taste Toppings: Tzatziki (homemade or store bought) Diced tomatoes Diced olives Feta Fresh herbs 1. Toss chicken and vegetables in the vinaigrette, oregano, and salt and pepper. Let marinate for 20 minutes. 2. Alternate chicken and veggies on your skewers. You may have some extra veggies- i like to make more skewers with no chicken and just vegetables for leftovers! 3. Heat a grill pan or outdoor grill over medium heat. Grease pan with olive oil. 4. Cook skewers for 18-22 minutes, rotating every 5 minutes or so, until chicken reaches an internal temperature of 165F. 5.
